Julian, Abby & Paloma

El Estanco is owned and run by Julian Velasquez, Abby Osborne and their daughter Paloma. 

Julian grew up in Bogotá , Colombia, where his love of traditional Colombian cuisine, and insight to food and cooking began. By the age of 18 he began his travels throughout Europe and England, eventually making his way to Australia in 2001 to study International Relations. Part time employment lead him back to his cultural roots in the kitchen, working his way up the ranks – leading him to a career on The Ghan. Through industry friendship grew a connection in the Barossa, which eventuated in Julian opening El Estanco in 2016. 

Abby grew up in England, emigrating to Australia in 2000, and settling with her family at their farm in Tasmania. She went on to pursue an Agricultural Science degree in Melbourne, resulting in a career at Treasury Wine Estate as a Viticulturalist. After many years moving around the country with Treasury Wines, she eventually found herself in the Barossa Valley, where she studied to become a patisserie chef at Le Cordon Bleu, landing her at some of the best restaurants in the Barossa region gaining invaluable experience. Abby joined Julian at El Estanco in 2017 – and hasn’t left since. 

It is the mix of Julian’s heritage and authenticity, and Abby’s industry experience, combined with hard work and a strong vision that has landed El Estanco where it is today, with an exciting new project to come in the near future…
